White Chocolate Chip Apricot Oatmeal Cookies
3/4 cup butter softened
1 teaspoon baking soda
1/2 cup sugar
2-1/2 cups rolled oats (uncooked)
1/2 cup packed brown sugar
2 cups white chocolate chips
1 cup dried apricots (or dried cranberries like Craisens)
1 cup all purpose flour
Heat oven to 375 degrees Beat butter, granulated sugar and brown sugar in large bowl until fluffy. Add eggs; beat well. Add flour and baking soda; beat until well blended. Stir in oats, white chips and apricots or Craisins. Loosely form rounded teaspoons dough into balls. Place on ungreased cookie sheet. Bake 7-9 minutes or until just lightly browned. Do not over bake. Cool 1-2 minutes, remove from pan to wire rack. Cool completely.
