Green Palm Inn Baked Eggs
8 eggs
1 small can chopped green chilis (Jalepeno)
1 16 oz container cottage cheese
salt
pepper
garlic and red pepper spice (see below)
1 cup shredded cheddar cheese
2 T all purpose flour
Holiday Option (for green and red veggies & color on top)
1/2 chopped fresh red pepper
asparagus spears
Method:
Spray a glass pie pan.
Mix Together:
8 eggs and 1 small can chopped green chilis
Add:  1 16 oz container cottage cheese, salt and pepper to taste.
(I use a spice combination called garlic and red pepper which you mill yourself) I count about 40 twists of the mill.
Mix: 1 cup shredded cheddar cheese with 2 tblsp flour (this keeps the
cheese from sticking together). Optional: Photo shows add 1/2 chopped red pepper when stirring in the cheese.
Blend this into the egg mixture. Pour into prepared glass pie pan. Option: top with asparagus spears for veggies and color (pressing into mixture slightly). Cover pan with plastic wrap. Let sit in fridge over night.
Remove from fridge about 1/2 hour before baking. Remove plastic
wrap and cover with tin foil. Bake at 350 degrees F. for about 1 hour 15Â minutes, until set.
Remove from oven and let sit about 8-10 minutes before cutting.
